    As far as I can tell, a "filestore" is simply a set of backups. What is confusing is that I wanted to use a NAS as a filestore, but as far as I can tell, Restore only backs up to a predefined folder on the local hard drive.

    The documentation is doesn't give any way around this shortcoming, and that is a deal breaker in my mind. Furthermore, every other backup system that I have ever seen refers to a "filestore" or "storage" in storage management terms, i.e. the destination for the backed up data. In fact, the only management of a filestore allowed by restore is to set the quota.
