The developers of this remake are not allowed to make a Linux version

Gabriel Knight: Sins of the Fathers 20th Anniversary Edition, a remake of the original game launched back in 1993, was initially announced for Linux, but Activision has decided to block the release on the open source platform.

Gabriel Knight: Sins of the Fathers was a great point and click adventure, and its fans have been awaiting with great interest the release of this Anniversary Edition, which would feature better graphics and various improvements, while retaining the feel and atmosphere of the original.

“Figured this deserved its own thread. I hate to be the bearer of bad news here, but my previous statement that GK would be available on Linux turns out to be incorrect. I can't even begin to imagine why, but Activision isn't allowing the game to be made for that platform. Just PC, Mac, Android, and iOS devices,” said Weldon L Hathaway, a Technical Director for Phoenix Online Studios.

It's unclear why a publisher would oppose the release on a certain platform, refusing the money that would be made from such version, but one thing is certain – Activision really doesn't like the money of the Linux users.
